Citation: At approximately 0601 hours, I proceeded downstairs to department #11 and #12., to perform scheduled procedure 01B02. During my observation/ verification I found noncompliance. The following is what I observed: The shackles for Line # [redacted] cut-up line were found with feathers, fat, skin , grease and other product residues. These findings varied in size and there were often several pieces per shackle. I counted at minimum 20 shackles to be unclean and stopped counting once I realized that the majority of the shackles; for this line, held the same findings. The blue "football' transfer conveyor held fat, grease and feathers. The findings were located throughout this conveyor and varied in sizes. The Epad ( C & D), white conveyor was found with several pieces of fat and/or meat. QSI Supervisor [redacted] was present during all my findings and was notified immediately of this noncompliance. No U.S. reject tags were applied to these pieces of equipment because corrective actions immediately began. However, production was not permitted to begin until the appropriate corrective actions were taken and verified. It took sometime for them to restore sanitary conditions to these pieces of equipment, but I remained there to observe and verify the actions taken. At 0800 hours [redacted]' [redacted] of QSI, was also notified of this noncompliance.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
