Violation:  381.65(e), 417.2(c)(4)

Citation:  At 0625 Hrs. while performing a Food Safety check on line # 1 fecal material was observed in one bird of the ten bird sample. The fecal material was located inside the bird on the left fat pad, greenish in color of a pasty consistence approximately 1/2 inch in size. , was informed and observed the 03J01 fecal non compliance. immediate corrective action taken was, the bird was taken to the product wash station, fecal removed and the bird was placed back into production before the (anti-microbial) System. The fecal is believed to have came from new employees in training to draw not washing their hands properly and drawing the birds too hard, causing the viscera to break off. The new employees were informed to wash their hands more often. I monitored the HACCP retest being performed at 0642 Hrs. and the check was found acceptable. No regulatory control action was taken on any product because the plant followed their HACCP corrective action procedure. indicated that her further preventive action to be taken for the rest of the shift, would be that when new employees were on the line they would be monitored closer. The 03J02 procedure was performed and found acceptable. Fecal was also found on 07/02/20010, see NR #0188-2010 dated 07/02/2010. 9 CFR 381.65(e) states "Poultry carcasses contaminated with fecal material shall be prevented from entering the chilling system. This document serves as written notification that your failure to comply with the regulatory requirements of 381.65(e) and 417.2(c)(4) could result in additional regulatory action as described in 9 CFR 500.4.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits
