Citation: While performing a Food Safety test on line 2 at 08:31hrs, I observed fecal material in bird #5 of the ten bird test. It was a 1/4 inch diameter greenish globule located in the kidney area. I notified of this HACCP non-compliance. Her immediate corrective action was to adjust the air pressure on the vent machine. Further preventative measures are to monitor the for the remainder of the period and make adjustments as necessary. A HACCP re-test was performed at 08:43 hours and found to be acceptable. The bird was washed at the product wash station and placed on the line prior to the rinse. No regulatory action was taken on the product because the plant followed their HACCP Corrective Action. The 03J02 procedure was performed and found acceptable. A fecal non-compliance was observed on 10/29/2010, see NR #00325- 2010. 9CFR 381.65(e) states, "Poultry carcasses contaminated with fecal material shall be prevented from entering the chilling system." This document serves as written notification that your failure to comply with the regulatory requirements of 381.65(e) and 417.2(c)(4), could result in additional regulatory action as described in 9CFR 500.4.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits
