Violation:  381.65(e), 417.2(c)(4)

Citation:  At 0725 hours, fecal material was observed while performing a food safety check on line # [redacted] The fecal material was located in the kidney area inside the bird. [redacted], was informed and observed the fecal noncompliance which was confirmed by [redacted]. The immediate action taken were to have adjustments made to the air pressure on the venting machine and the water pressure was checked on the sprayers at the final wash. No regulatory control action was taken because the plant complied with their corrective action immediately by washing the affected bird with [redacted] water and placing it back into production prior to the antimicrobial rinse. A retest was performed at 0752 hours and the plant's process was found to be in compliance. To prevent further occurrences the venting machine and the final washer was being monitored for the remainder of the shift. I performed the 03J02 procedure and all elements were found to be in compliance. Fecal was also found on 07/28/2010, see NR #0209-2010 dated 07/28/2010. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits
