Citation: At 12:12 [redacted] identified a fly on carcass 25 of lot 904 at final rail inspect ion station .The fly was identified on the 2nd ha lf of carcass on the front quarter. [redacted] was notified and shown pest.The area was trimmed, and production resumed .At 12:30 a fly was observed at final rail inspection station along the back of carcass 12 of lot 906. [redacted] was notified and shown non compliance. The pest was killed, carcass trimmed and re inspected [redacted] stated the area will get sprayed to prevent further pest from entering product ion area.This document serves as written notification that you r establishment failed to comply with FSIS regu latory requirements cited above. 416.2(a) Grounds and pest control. The grounds about an establishment must be maintained to prevent conditions that could lead to insanitary conditions, adulteration of product, or interfere with inspection by FSIS program employees. Establishments must have in place a pest management program to prevent the harborage and breeding of pests on the grounds and within establishment facilities. Pest control substances used must be safe and effective under the conditions of use and not be applied or stored in a manner that will result in the adulteration of product or the creation of insanitary conditions.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
