Citation: At approximately 0730 hours the following condition was found in the cooler located just off the cut up room. various blue totes of product were stored on a pallet on the left hand side of the cooler these parts were from a previous production and had no identification provided for them. USDA took regulatory control action on this product by placing US Retain tag #s B43736008 and # B38868570 on this product. If product is held in a combo or tote which is not an immediate container the container only needs" identification " so that it is tied to the HACCP record in some manner and that inspection personnel can then match the record to the product and then to the final package to verify compliance The establishment also needs to identify the product with their HACCP records, so they can also properly label the finished product and also be able to identify any affected product if their review of records shows a deviation from a critical limit or some other issue that is tied to a specific production of product so "identification of product throughout the process is important . Whatever method the establishment uses to identify the product needs to be shared with in plant inspection team to ensure everyone is on the same page regarding the product being produced Reg 9 CFR 381.126 states Either the immediate container or the shipping container of all poultry food products shall be plainly and permanently marked by code or otherwise with the date of packing. If calendar dating is used, it must be accompanied by an explanatory statement, as provided in ä381.129(c)(2). (b) The immediate container for dressed poultry shall be marked with a lot number which shall be the number of the day of the year on which the poultry was slaughtered or a coded number. d) If any marking is by code, the inspector in charge shall be informed as to its meaning. Ms. was notified verbally and in writing of this NR of this non compliance. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory of administrative action(s)

Regulation:
