Citation: On this day at 01430hrs, Inspection performed an 03J01 verification procedure concerning CCP1B--visible examination of turkey carcasses before trussing/zero visible fecal. Bird #1 of 10 was observed to have fecal material between the right outside portion of the breast and the skin and connective tissue near the thigh. Fecal was yellow and paste like with no visible plant material contained within it. Also observed was particulate matter (granular and yellow) on the left inner thigh. Immediate regulatory control action was initiated with stoppage of the chill line, and production lead removed the bird for reconditioning after he observed the fecal material. was verbally informed of findings made by Inspection and was advised to begin corrective actions concerning the deviation from the critical limit. Observation by Inspection represents a violation of 9 CFR 417.2(c)(4) states "List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;", and 9 CFR 381.65 which states "Operations and procedures, generally. (e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank." was informed of this non-compliance with regulations verbally and was informed in writing with the issuance of this Non-compliance Report. Past Similar NRs - Previous Ineffective Plant Actions: plant has not yet responded to this non-compliance NR: 15-2011 dated 9/19/2011

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
