Citation: At approximately 5:30 am, Dr. was walking through the evisceration department and observed condensation on the poultry line rail over the trim stations on the west line, and it was heavy and beaded. There was heavily beaded condensation over the east line cropper on a white pipe. Both these objects were over product and contamination was imminent. No condensation was observed dripping on product.Also there was some beaded condensation on the east line at the trim stations.In addition, there was condensation on various pipes throughout evisceration. Dr. notified and pointed out the areas of condensation to establishment personel. At approximately 6:25 when I came down to evis to recheck the area, I noticed condensation on the pipe in the middle of the evis department. I notified and she told the plant employee who was taking care of condensation. I also notified Dr. This failure is a violation of 416.1 and 416.2(d). This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
