Citation: On Tuesday, May 29, 2012 at approximately 15:43 hours while the establishment was on lunch break I observed approximately 10 improperly covered chickens on the short hock hang back rack in the evisceration area. Upon further observation, two chickens were fully exposed to the environment and the rest were improperly covered (the front of some birds were covered while the backs were exposed to the environment and vise versa). As the line started due to employees returning from lunch, I took a regulatory control action and stopped the line at approximately 15:44 hours. At that point, a maintenance employee proceeded to question me on the control action. He then turned and re-started the line. At approximately 15:46 hours I re-stopped the line from a different location. I then notified Chicken Evisceration Supervisor of the noncompliance and the actions of the maintenance employee. Mr. condemned the chickens on the rack and I released the line to production at approximately 15:48 hours. The establishment is in noncompliance with 9 CFR 416.4(d) as well as their SPS program #9A.     

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
