Citation: At approximately 0900 hours while performing records verification check for the date of 4/18/12, I observed the following: The Poultry Carcass Chilling Record did not have a time recorded for the verification of records that was performed on 4/19/12. Also, the Final Inspection Monitoring Log for fecal for carcasses and also for giblets did not have a time recorded for the verification of records that was performed on 4/19/12. Regulations 417.5(b) were not met.
Regulation:
417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
