Violation: 416.13(c), 416.4(a), 416.4(d)
Citation: At approximately 0710 hrs. while performing an O1C02 procedure operational sanitation, I observed an employee at the tray pack table, pick up a rubber mat that was on the floor and move it to the area where she was going to stand. The employee proceeded to move black trays that were on the table that were going to be used for packing deboned breast, the employee failed to wash or change her gloves after picking up the mat on the floor. Another employee at the same table started to move the black trays for productions, that the other employee had touched. I informed Ms. [redacted] packing room supervisor and Mr. [redacted] lead person for tray pack of the noncompliance. Mr. [redacted] took immediate corrective action therefore no further regulatory control action was needed. The plant is not meeting CFR 9 416.13(c), 416.4(a) & 416.4(d) Past Similar NRs - Previous Ineffective Plant Actions: further plan action was either not implemented or was ineffective. NR: 3-2011 dated 1/6/2011 This document serves as written notification that your failure to comply with regulatory requirement (s) could r result in additional regulatory or administrative action.
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
