Violation: 416.13(c), 416.4(a)

Citation: At 0650 Hr. while conducting the 01B02 procedure I observed in the evisceration room, the giblet table with one piece of approximate 1/4 " fat and 3 black particles on the SS surface. I immediately notified [redacted] Plant Manager. No regulatory control action was taken since the plant took immediate corrective action. This is the violation of 9 CFR 416.13(c) and 416.4(a).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
