Citation: On June 6 2012, at approximately 1345 hours while Dr. [redacted] and I were performing Operational Sanitation task the following noncompliance was observed: The turkeys hanging on the cut line had multiple black specks of unidentified material on them. Upon closer inspection I noticed that the cut line conveyor belt and the turkey breasts being placed on this belt also had multiple black specks. These turkey breasts with black specks on them were being placed in a bin to be moved into the freezer. The unidentified black material appeared to be falling from the over head supporting beams of the cut line. I informed [redacted] of the noncompliance, he stopped the line and instructed plant employees to rework the affected product. No additional product was hung on the cut line.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
