Violation: 416.2(b)(2), 416.4(a), 416.4(b), 416.4(d)

Citation: At approximately 0630 while performing a routine operational inspection Dr. and I noticed the following noncompliances:[newline]1. Cob webs were noticed in the holding pen area.[newline]2. On the slaughter floor the light shades are starting to rust and the main beam is rusted.[newline]3. In the rendering room it was noticed that the ceiling was covered with fat and other debris from previous slaughter days.[newline]4. In the cutting room the cooling unit directly above the table where the meat is being cut up has peeling paint. This is a potential hazard because pieces of paint could fall onto the meat that is being cut.[newline]5. On the wall next to the main office the shelf and bar that is used for clean towels and aprons, a build up of dust and dirt is on the metal bar.[newline]6. The racks that are used for totes of product are rusty.[newline]7. Also the motor for the band saw and an electrial box over the sink is rusty.[newline]8. The sinks through out the plant need to have signs identifing where they are for product wash or hand wash.[newline]9. The seals around cooler doors # 3, 4, & 5 are either loose or missing.[newline]10. The shelf in the RTE room that is above the sink is dirty and cluttered. Also the whole area is cluttered. Dirty towels, hooks and rods where in the sink before and during preoerational inspection.[newline]11. The racks used for RTE Beef Jerky were dirty and are not being cleaned on a regular basis.[newline] [newline]Mr. has been verbally notified of these noncompliances.[newline]The plant is in violation of 9CFR 416.4(a)(b)&(d).[newline]This document serves as written notification of the noncompliances.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
