Citation: On 30 March 2012, at approximately 0750 hrs, as I performed a directed Operational Sanitation Review and Observation task, I noted the following noncompliance: I observed an employee, , attempt to move a very large swine carcass through the door in the middle cooler into the processing room; being unsuccessful in moving this through the door simply by pushing it forward, he used his right foot to kick the pig forward. The carcass then rolled down the rail into the processing room. No efforts were made to restore sanitary conditions to the carcass. Upon observation of the noncompliance, I applied US Rejected/US Retained tag number B43736050 to the carcass. [redacted] was notified of the noncompliance at the time of occurrence--he admitted he had done this, and was wrong in doing so. Plant employees trimmed this area of the carcass and applied a peroxyacetic wash to restore sanitary conditions. At this time (approximately 0755 hrs), the US Rejected/US Retained tag was removed and the carcass was released. I informed plant management ( of the noncompliance at approximately 0800 hrs; at this time, I witnessed the establishment counsel about the noncompliance. The establishment is not in compliance with the following regulations: 9 CFR 416.4(d) and 9 CFR 416.5(a).


416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

416.5(a) All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.
