Citation: On 27 March 2012, at approximately 0650 hrs, I entered the middle cooler as I was performing a pre-operational sanitation procedure. I noted a row of approximately twenty split market swine carcasses lined up on a rail immediately before the entrance leading to the processing room, as these aforementioned carcasses awaited further processing. Further review of the carcasses revealed the following noncompliance: Two of the carcasses in this line were observed to be in direct contact with the floor beneath, in the neck region of the carcass. Upon identification of the noncompliance, I took immediate regulatory control action and affixed US Rejected/US Retained tag number B43736028 to this row of carcasses. Plant Consultant, was notified of the noncompliance at the time of occurrence. Plant employees immediately trimmed off sections of meat in direct contact with the floor and discarded the meat in inedible barrels. I was satisfied with their actions and removed the tag by approximately 0652 hrs. The establishment is not in compliance with the following regulations: 9 CFR 416.2(b)(1) & 9 CFR 416.4(d).


416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
