Citation: While performing PBIS procedure code 04C03 Boneless Meat Defect AQL check this morning at approximately 1105 hours I picked a Pork Jowl out of the combo bin to look at and found an area approximately two inches in diameter covered with ingesta. This ingesta was yellowish tan in color with fibrous plant-like texture meeting the regulatory definition of ingesta as defined in FSIS Directive 6420.2. A U. S. Retain Tag #A8065648 was applied to this combo bin of Pork Jowls. Ms. [redacted] QC and [redacted] Foreman were informed and shown this noncompliance. 9 CFR 310.18(a) States in part that "Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter: however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
