Citation: At approximately 0915, while performing a scheduled 06D01 procedure, Inspector [redacted] and I found the ceiling of the dry storage area located adjacent to the offal area was dripping condensation onto a top layer of two stacked columns of boxes located in the first 5 feet of the storage area. Beaded condensation was also found in a 3 X 2 area of the ceiling to the left of the box storage area. Several stacks of boxes were also located under the beaded condensation. I placed the US Reject tag B43736004 on the storage area and notified Mr. [redacted] of the noncompliance. Mr. [redacted] immediately went to the box area and proceeded to wipe down the condensation and throw away the top layer of all boxes under the condensation area. The fan was turned on after the wiping of the condensation was completed. At approximately 0940, the area was released. The establishment is in noncompliance with 9 CFR 416.1 which states: "each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that the product is not adulterated." The establishment is also in violation of 9 CFR 416.2(d) which states "ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. Past Similar NRs - Previous Ineffective Plant Actions: The establishment stated that the storage area would be checked periodically for condensation and the high velocity fan would be turned on to remove condensation if it is present. 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
