Citation: At 0715 hrs; While performing a review of facilities; I removed a stainless steel cover from drive motor for the moving evisceration line, and observed a heavy accumulation of flaking rust and peeling paint on motor and transmission. I notified Mr. [redacted] and Mr. [redacted] Jr. of the deficiency. Though this machinery is a non - food contact surface, it is located in an edible product processing area, and needs to be maintained in a sanitary manner. This is written notice of the establishment failure to comply with 9 CFR 416.2(b)(1) of the Sanitation Performance Standards.


416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
