The plant's preoperat ional sanitation monitoring log has no documentation reflect ing the insanitary conditions. In addition, the plant's Sanitation SOP, preoperational sanitation section states that the [redacted] This is a failure of 9 CFR 416.4(a);416.4(b); and 416.13(a). Consequently, official control action was in itiated and US reject Tag#87619085 was applied to the stainless steel roll tub adjacent to the slicer. US Reject Tag #87619084 was applied to the stain less steel table and scale adjacent to the slicer. The roll tub, table and scale were cleaned, sanitized, inspected and released. The 3 inedible barrels, scale stand and packaging table were cleaned and sanitized immediately. Repetitive NR: Management's unwill ingness/inability to properly implement the written procedures in the SSOP, and subsequent failure to prevent contamination of food-contact-surfaces prior to the start of operations, has resulted in a trend of noncompliance. This NR is l inked to NR #MDG530511316/1N, issued on 11/29/2011.Trends of noncompliance are identified as having the same/similar root cause.
