Citation: At 0630 hrs on the 17th of November, while performing operational sanitation verification in the processing room, I observed the following noncompliance: * an employee was opening boxes of palletized tempered boneless beef, removing the plastic wrapped beef from the boxes, removing the plastic from the beef,then hand ling the exposed beef without first washing/sanitizing his hands or removing his coat. * one rack of ground beef patties were stored in the freezer adjacent to the entrance from the processing room. Above the rack were 2 wooden pallets. The top tray of beef patties was exposed; therefore, providing the opportunity for particles of dirt or wood from above to fall onto the exposed product. [redacted] was advised of the aforementioned noncompliance. This is a fail ure of 9 CFR 416.5(a) and 416.4(d).


416.5(a) Cleanliness. All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
