Citation: While performing a scheduled 01B02 at 7:25 a.m. the following 04B04 noncompliance was found upon entering the raw cooler. A rack containing 3 lugs of lamb meat in the center of the cooler had no identification on the lugs of meat. There was also a rack in the back right corner of the cooler that had an additional 5 lugs of meat on it, the top 4 lugs of meat were identified but the bottom lug had no identification on it. Management was in another area of the establishment so regulatory action was taken and retained tag B18896944 was placed on the unidentified products. Mr. [redacted] came to the cooler and identified the products and placed hand written labels on the products. The products were then released for packaging and labeling. Mr. [redacted] was notified that this was a violation of 317.1(a) "When, in an official establishment, any inspected and passed product is placed in any receptacle or covering constituting and immediate container, there shall be affixed to such container a label as described in 317.2." No similar NR's of this nature were found in the last 60 days. This NR serves as written notice that your failure to comply with regulatory requirements could result in additional regulatory and/or administrative actions. You are hereby notified of your right to appeal this decision as delineated by 306.5 and/or 381.35 of 9CFR.
Regulation:
317.1(a) When, in an official establishment, any inspected and passed product is placed in any receptacle or covering constituting an immediate container, there shall be affixed to such container a label as described in § 317.2 except that the following do not have to bear such a label.
