Citation: On Tuesday 01/25/2011, at approximately 1130, the following was observed on the slaughter floor: The chaulking around the light switch next to the sterilizer and adjacent to the final wash stand is starting to peel away from the wall and the chaulking also has discolorization possibly from residue build up. I notified [redacted] of this observation. No product was involved and no regulatory control action was taken. This does not comply with regulation 416.2(b)(1); 416.4(b). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
