Citation: while performing a walk through of the establishment the IIC opened the freezer that contains the retail product that the establishment sells at the plant. There were bags and boxes of product stored under the retail rack. The overall condition of the freezer was clean and neat. When this was brought to the owners attention he had the non-compliance corrected. There was no USDA retain/reject issued due to the prompt compliance of the plant. 416.4(d) states; " Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments." "This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action."
