Citation: Today, May 23, 2012 at approximately 0930 hours while performing a Livestock Zero Tolerance Verification task, I observed the following noncompliance. Approximately 5 locations on the first carcass I observed pieces of what appeared to be fecal contamination; greenish brown in color; approximately 1/4 of an inch or less in diameter. I had been verbally told by the slaughter personnel that he was ready for me to perform my check. I notified the plant personnel of the deficiencies and he immediately trimmed them. The carcass was reinspected and passed. Mr. [redacted] was notified verbally and in writing with this document. A review of the noncompliance record indicated no similar noncompliances in the past 90 days.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
