Citation: While performing the sanitation performance standard task on May 24 at 7:00, I found the following noncompliance in the processing room. The chalking on the joint on the wall by the meat saw is loose and pulled away from the joint. There is also some plastic from the joint exposed as well. There is some chalking hanging down from the ceiling and wall joint near the sterilizer and scale area. I reviewed the plants PIP form and found no documentation of this noncompliance. I notified [redacted] of the noncompliance.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
