Violation: 416.1, 416.4(b)

Citation: On 5/14/12 at approximately 1030 hrs. while performing operational sanitation review and observation, the following noncompliances were observed.
1. Cut Floor - There are 5 ceiling/wall mounted fans, 1 by product was sink, 2 under the mezzanine where the conveyors enter the pack off room, 1 by the floor scale, and 1 by the dumper. All 5 fans have a buildup of dust etc. on the wire guards protecting the fan blades.
2. Ceiling fan in hallway between ham processing area and sausage dept. has a dust and dirt buildup on the wire cage protecting the fan blades.[newline] 3. Fan guards on the cooling unit in the injector area by the spice room have peeling paint and showing signs of rust.

[redacted] processing supervisor and [redacted] cut floor supervisor were advised of these noncompliances and the failure to meet the regulatory requirements of 416.1, and 416.4(b).

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
