Citation: At 0700 hrs on the 4th of August, while performing preoperational sanitation verification (01B02), I observed the following noncompliance: Equipment Storage Area * blood and organic matter on several yellow aprons, knives and scabbards hanging on hooks on both sides of the room (product contact surface). [redacted] slaughter supervisor, was advised of the aforementioned noncompliance. The plant's preoperational sanitation monitoring log has no documentation reflecting the aforementioned insanitary conditions. In addition, the plant's Sanitation SOP, preoperational sanitation section states that [redacted]. This is a failure of 9 CFR 416.13(a) and 416.4(a). Consequently, official control action was initiated and U.S. Reject Tag #B8919412 was applied. The equipment was cleaned, sanitized, inspected and released.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
