Citation: On 4/13/11, at approximately 08:45 am, while performing unscheduled PBIS task code 06D01, I observed the following non compliances. 1. The right side shipping dock, which is used for inedible barrel storage, was seen to have numerous puddles of bloodstain, from Tuesday pick up of these barrels. 2. A honeycomb shaped ceiling tile above the exit door, from the carcass holding cooler to the boning/cutting room, and a portable fan, that is in the ceiling behind the middle refrigeration unit, was seen to have pieces of white styrofoam, the size of eraser heads, hanging from each.
