Violation: 416.1, 416.2(b)(2), 416.4(b)

Citation: On 2-2-11, at approximately 1:30 pm, while performing unscheduled task code 06D01, I observed the following non-compliances. Shipping cooler- The wall directly forward, from the entrance, the bottom left storage shelf, was seen to have (8) cans of tomato paste/sauce, with rusted outer surfaces and several of the cans are frozen to the ledge of the shelf. Cans were retained with USDA tag # B 19 170811. The tomato paste/sauce is an ingredient, in the making of chicken gyros. Storage room- The room to the left, of the label rack, which is in the RTE room, was seen to be cluttered with the following items 1. A rodent box with no ID. 2. An old table top wrapping machine being stored directly on the floor. 3. An old tire mounted on a steel wheel. 4. (2) types of torn and frayed hoses being stored on the floor. 5. Rubber gloves. 6. A 2'x4' ceiling panel. The area is in need of general cleaning. Warehouse- 1. The right label/box storage room, was seen to have cobwebs overhead on the cement framework. 2. A stainless steel tub was being used for garbage(wood scraps, used cardboard, used plastic jugs). These same type of tubs, are used for edible product handling/storage. A USDA reject tag # B19170793 was placed on the said tub. Storage containers can't be used, for both edible and inedible use. After a review of the plants PIP and the daily SSOP for today(2/2/11) , none of the items mentioned above were documented by plant management. Mr. [redacted] was informed of these deficiencies, both verbally and in writing with this NR.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
