Violation: 416.1, 416.2(b)(2), 416.4(b)

Citation: On 12/15/10, at approximately 08:35 am, while performing unscheduled PBIS task code 06D01, I observed the following non-compliances. 1. In the kill floor department, the support beam above the hoist that holds the carcass splitting saw was seen to have flaking paint/rust, the approximate size of 3x5 ". 2. The paper towel dispenser, that is located to the right of the sterilizer and radio, was seen to have flaking paint, on the outside surfaces. 3. (1) ceiling panel that was once used to deflect water from a leaking pipe, has a accumulation of dust and/or grime. 4. The stainless steel covers, used for the meat shoot, that is not in use anymore, has meat and/or fat particles on the on the outer surfaces. After a review of the daily SSOP,dated 12/15/10, none of the items noted above, were documented for that day. There is no direct product involved in any of the deficiencies 1-4. This is in violation of FSIS regulations 416.1,416.2(b)(2), and 416.4(b) Mr. [redacted] was informed of these non -compliances both orally and in writing with this NR.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
