Citation: At approximately 0745 hours while performing unscheduled ISP code 01B02 in the downstairs processing room I observed the following deficiencies. There is an accumulation of dried meat and fat particles and residue build up on the inside and outside surfaces of the K & G Wetter chopper. This piece of equipment has not been used lately and was not in use today. It is located in the processing room in close proximity to other pieces of equipment that are in use. There is an accumulation of dried meat particles measuring about 1/8 to 1 inch in diameter on the ceiling and the light cover over the wiener stuffer. The affected area was about 1ft. x 2ft.. There are several used poultry box tops that are stored on the floor of the adjacent storage cooler. The hand wash sink in the processing room has several pieces of dried meat particles on the inside and outside surfaces. A check of the daily SSOP records found that these deficiencies were not documented. No tag applied. No direct product involvement. This is a violation of FSIS regulations 416.1 and 416.4(b). I informed Mr. [redacted] orally and in writing with this NR of the noncompliance.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
