Citation: At approximately 0745 hours, while performing an 06D01 walk through of the plant, the following noncompliance was observed: The stairway leading from the shipping dock to the upstairs hallway, was seen to have dried meat and fat particles throughout the grates of the steps and also the stainless steel step covering. I informed Mr. both verbally and also with the writing of this document. This document is linked to noncompliance record # 0029-2010-17226.
Regulation:
416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
