Citation: On November 22, 2010 at approximately 1615 hours while performing 03J02, HACCP Slaughter Verification Procedure, I observed two carcasses #221529-2 and #221530-2 with fecal/ingesta contamination on them. Carcass #221529-2 had contamination located on the brisket and inside the neck. Carcass #221530-2 had contamination located on the shank, brisket, and inside the neck. Both carcasses had green/brown, plant like fibrous particles that ranged in size from one millimeter in length up to one centimeter in length in the affected areas. Upon observation of both non-compliances, the production line was stopped and all visible contamination was removed by the adjacent trimmers. Production was allowed to resume after the carcasses were presented for re-inspection and passed. [redacted] line leader for this area, was shown the contamination and notified of the non-compliance. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
