Citation: On Tuesday, January 24, 2012 observed the following noncompliances with Sanitation Performance Standards – Construction and Sanitary Operations – non food contact surfaces. InedibleRoom: 1) Overhead door air curtain at entrance, observed the appearance of surface rust.2) Observed cobwebs above the electronic insect killer device. 3) Observed numerous small holes within several ceiling tiles and wall panel.4) Two of the 2-wheel upright dollies used to transport inedible barrels observed rust in several areas.5) Wall exhaust fan, observed peeling gray paint on the motor housing.6) Exit door leading to the barn, overhead door rail and supports observed to be rusted the entire length. length. Kill Floor, Final Inspection side: 7) Observed several cobwebs along the ceiling among the electrical lines and piping. 8) Observed a dark discoloration on the top side of the overhead pipes among the ceiling area. Informed [redacted] Plant Production Supervisor of the noncompliance’s both verbally and in writing with this Noncompliance Record.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
