Citation: At approximately 0930 hours while performing a scheduled operational performance procedure(01C01) the following recordkeeping noncompliance was observed. On the operational sanitation logs the SSOP [redacted]. For the date of 9/23/2011 there was no entry made. Dave Froehlich, owner, was informed of the violation and the need for corrective action. This is a violation of the afore mentioned regulation which states" 416.16 (a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP's and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOP's [redacted]" A review of available plant records indicate no action had been taken on this noncompliance and a check of the noncompliance record show no recent noncompliance of this nature. No product was involved.
Regulation:
416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP’s and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOP’s as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOP’s shall authenticate these records with his or her initials and the date.
