Citation: At approximately 0800hrs. while performing an O1C02 , operational sanitation procedure, I observed in the boning room condensation forming on the cooling unit on the ceiling inside the door that is next to the main stairway. The water droplets were visible thru out most of the unit. The gray pipe that leads out of the unit had water dripping from it. I informed Mr. [redacted] Q C who was working on return product in the same area.Mr. [redacted] took sanitary measures to wipe the unit dry. After Mr. [redacted] was done wiping the unit dry he returned to working at the rework station. About 10 minutes later at the same area water droplets formed again on the unit and I observed the droplets drop in a yellow combo of trimmed loins. I informed Mr. [redacted] that the droplets were causing an unsanitary condition. Mr. [redacted] took immediate corrective action by reworking the loins and placing a clean yellow combo at another area in the room. Mr. [redacted] also called maintenance . No further regulatory control action was needed. The plant is not meeting 9CFR 416.2(d) and 416.4(d). Past Similar NRs - Previous Ineffective Plant Actions: Plant's further response was ineffective or was not implemented NR: 30-2010 dated 8/27/2010 This document serves as a written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
