Citation: At approximately 01005 hrs. while observing the process in the bacon room, I observed an employee at the area where bacon slabs are loaded on the two slicers, pick up an orange handled meat hook that had fallen on the floor and place it on the side of the first slicer and walk away. I informed Mr. [redacted] Q. C. and Ms. [redacted] Supervisor of the non compliance. Immediate corrective action was taken by another plant employee therefore, no further regulatory control action was needed. The plant is not meeting 9 CFR 416.4(a) & 416.4(d).

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
