Citation: At Approximately 0815 the following was observed on the kill floor of the plant during killing operations . An employee went to get a Gambit to use on a pig to hang on the rail This gambit was dropped and fell on to the floor. The employee picked up the Gambit and proceeded to rinse it off in the hand wash sink and dunk it in the sanitizer located next to the sink. The Establishments SOP states " [redacted] ." As the SOP states [redacted]. Mr. [redacted] was notified verbally of this non compliance and in writing of this NR Reg 9 CFR 416.13(b) states Each official establishment shall conduct all other procedures in the Sanitation SOP's at the frequencies specified Reg 9 CFR 416.4(a) states All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
Regulation:
416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOP’s at the frequencies specified.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
