Citation: At approximately 12:00 on September 15, 2010 while performing and unscheduled PBIS task 06D01 the following noncompliances were observed. Chill cooler door, the inside flashing/trim is damaged in and area approximately four inches wide and two feet long. Inedible door frame, going from the inedible room to the pens is damaged at the bottom on the right side and area approximately eight inches high and eight inches wide. Inedible room door, the glass board is separating from the door frame on the edge and side. Compressor room, there is old equipment, boards, racks, barrels and debris, this room is in need of general cleaning and the glass board is separating from the compressor room door on the top and edge. The area where carcasses are washed there is a rusty pipe and motor sitting on top of and old kettle. Mr. [redacted] was verbally notified of the above noncompliances. This is a violation of part 416.1 General rules. "Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.2 (b) (1) (2) Construction. (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. (2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
