Violation: 416.13(c)
Citation: At 700 hrs. on September 08, 2010, after management informed me that they have completed there preoperational inspection and no deficiencies were found. I then proceeded to perform the unscheduled PBIS task 01B02,and the following noncompliance was observed. On the kill floor area to the left at the bottom of the steps, the hand saw that is used for splitting briskets had dried meat and fat particles measuring at least a quarter inch in size. Mr. [redacted] was verbally notified of the noncompliance. No Regulatory Control action was taken due to Mr. [redacted] took the saw and immediately cleaned and sanitized. This is in violation of part 416.3 (c) "Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's." At 710 I was asked to re-inspect the saw and at that time it was found to be acceptable. I then checked the NR file and found no recent noncompliance reports of this nature.
