Violation: 416.13(c), 416.4(a)
Citation: At approximately 07:02 am on September 23, 2011 after Plant management informed they were ready for pre-operational sanitation Inspection the following noncompliance were observed. In Processing Room # 2 the stuffer has several meat and fat particles from previous production on the inside exit area of the lid, the particles were approximately 1/8 inch in size; [redacted] was verbally notified of the above noncompliance. No product was involved and no regulatory control action was taken because plant personnel immediately started to clean the effected equipment. I reviewed the SSOP corrective action log and found no documentation or corrective action. This is a violation of part "416.13 (c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's" and "416.4.(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product". At 07:10 am the stuffer was re-inspected and found acceptable. I reviewed the NR file and found no recent noncompliances of this nature, .
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
