Citation: On 01/26/11 as I was performing the 06D01 procedure the following noncompliance was observed. On the kill floor as I was performing the final rail check for zero tolerance I observed an area of approximately 3 inches by 4 inches in the pelvic area, of the first half of a beef carcass, that had fecal matter on it. Mr. [redacted] was notified of this noncompliance verbally and in writing with this NR. upon notification Mr. [redacted] trimmed the fecal matter off of the carcass so no regulatory control action was taken. 9CFR 310.18 states carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
