Citation: On Tuesday, January 17, 2012, at approximately 0950 hours, I observed the following non-compliance in establishment's HACCP record keeping. On CCP form (Form#HACCP-01, effective date: 07/07/11), dated 01/17/12, there was a missing entry of temperature monitoring and "time out" for CCP#3 - Liver, Heart and Gizzard Chill Log. The "time in" for this lot was recorded as "7:35". For giblets chill down, the critical limits for each preventive measure as stated in the establishment's HACCP plan as "[redacted]." The "time out" and temperature check for lot#2 should have been completed by "9:35". The evidence was shown to the plant management, [newline][newline]This is a non-compliance with 9CFR 417.5(b), which states "Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry." Continued failure to meet regulatory requirement would lead to further enforcement action.
