Citation: At Approxamately 0615 hours, CSI and SPHV observed the following non-compliance: While in the process of conducting pre-op sanitation, we decided to do a random tempreture check. We had production supervisor check the tempreture of the Giblets in the first cooler, using the establishments thermometer, and the tempreture was at degrees. I immedietly notified Production supervisor of the non-compliance and applied a US retained tag no: B38033317. He was informed that the regulatory control action would remain in effect until the establishment demonstrated product safety. Past Similar NRs - Previous Ineffective Plant Actions: Plants verbal response was that they would add more ice and continue monitoring NR: 22-2011 dated 5/21/2011

Regulation:

381.66(c)(4) ) Giblets must be chilled to 40 °F or below within 2 hours from the time they are removed from the inedible viscera, except that when they are cooled with the carcass, the requirements of paragraph (b)(2) of this section must apply. Any of the acceptable methods of chilling the poultry carcass may be followed in cooling giblets.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
