Citation: October 16, 2011 16:32 hours While performing an unscheduled, 03B01, HACCP category raw, non-intact product recordkeeping inspection procedure, I observed that a member of management had incompletely documented his or her findings while monitoring the temperature of mechanically separated young chicken on 10/12/2011. The HACCP processing form on which the establishment recorded its monitoring of the Critical Limit of Critical Control Point #4 for the production of this edible product included a temperature and a time of day but had not been authenticated with a signature or initials by an authorized member of management or designated employee. This constitutes a failure to comply with the United States Code of Federal Regulations, Title 9, Chapter III, Animals and Animal Products, Subchapter E, Regulatory Requirements under the Federal Poultry Products Inspection Act, Part 417, Hazard Analysis and Critical Control Point (HACCP) Systems, Section 5(b). Federally-inspected food production establishments are required to fulfill the expectations of all applicable requirements of the United States Code of Federal Regulations and Food Safety and Inspection Service. In this instance, a designated establishment employee has failed to sign or initial data entries made on a record maintained under this firm's HACCP plan. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).
Regulation:
417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
