Citation: Tonight at approximately 1855 hours, I observed water beads appearing at the bottom surfaces of all 4 cooling units located inside the large poultry processing room. Beaded condensation was observed. No food products were put below that 4 cooling units at the moment. Processing Co-Manager Mr. [redacted] was notified and shown of the noncompliance. Mr. [redacted] immediately asked a plant worker to clear that water beads appearing at that 4 cooling units and checked for other areas. Failure to meet the federal regulatory requirement of the 9 CFR 416.2(d) which states: Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
