Citation: While performing pre-operational inspection at approximately 9:15 am at Kirya's Joel's (Est. 31727-P) in the processing room found the following non-compliance. One of the bone saws up on the principal conveyor belt was found with fat residue up inside the blade guard. The fat residue found was approximately 4 inches long by « inch wide. [redacted] (Processing Co-Manager) was informed of the non-compliance and the area in question was immediately cleaned and sanitized and re-inspected and released by me. The reveiw of the pre-operational records revealed that this area was acceptable. This is a failure of 416.13(c).
Regulation:
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
