Citation: Today at approximately 2000 hours, during the night shift operating time, in the poultry processing room, I observed one establishment worker hand transferring contaminated poultry products into the clean food-contact surface of the poultry parts transporting belt from the "product wash sink" without rinsing the poultry products with chlorinated solution from the sink while the other contaminated poultry products were keep transferring into the same sink by another worker. I immediately called the plant workers to stop the operation and notified of the noncompliance to the plant's processing manager Mr. [redacted]. Mr. [redacted] immediately told the plant's workers to [redacted] as the plant's SSOP discribed. I then, observed the entire cleaning procedure performed by the plant's workers on all the contaminated food contact surfaces and the contaminated poultry products. The corrective action cleaning result was satisfied, no tag was applied. Plant's SSOP-Monitoring (1) states: [redacted] Plant's SSOP-Falling-down birds states: [redacted]. Failure to meet the federal regulatory reqirument of the 9 CFR 416.13(c) which states: Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. Failure to meet the federal regulatory reqirument of the 9 CFR 416.4(a) which states: All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. Failure to meet the federal regulatory reqirument of the 9 CFR 416.4(d) which states: Product must be protected from adulteration during processing, and handling. This document serves as written notification that failure to comple with requlatory requirment(s) could result in additional regulatory or adminestrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
