Citation: March 22, 2011 07:47 hours While performing an unscheduled facilities and equipment, 06D01, sanitation inspection procedure in the kashering department, I made the following observations: 1. Extensive metal oxidation on the blue-gray handle of a pull cart used to transport fifty (50) pound bags of kosher rock salt to the salting tables. Rust stains affecting a total area of approximately six (6) square inches were also present on the black, plastic base of the cart from contact with this handle when in its folded position. 2. Circular colonies of white mold affecting the surfaces of ten (10), black, 3/4-inch, 600 volt rubber cables. The cables are all suspended from the drop ceiling throughout the department and are non-food contact surfaces. 3. Colonies of black mold proliferating on the orange, fiberglass front and rear rails of a six (6) foot ladder with serrated aluminum steps. The cart, ladder, and black rubber cables were rejected by the application of the Food Safety and Inspection Service Forms 6502-1 #B39718890, #B39718889, and #B39718809, respectively. These observations constitute failures to comply with the United States Code of Federal Regulations, Title 9, Chapter III, Animals and Animal Products, Sections 416.1 and 416.4(b). The evisceration department's junior manager, [redacted] was notified of the noncompliances verbally promptly. This document serves as written notification that failure to comply with regulatory requirements may result in additional regulatory and/or administrative action(s).
Regulation:
416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
